South Western Nova Scotia is home to the largest annual landings of live Lobster in Canada. The lobster fishery is a multi-million dollar industry supplying markets domestically and abroad. Homarus Americanus, are well known and loved, widely regarded as the world's best Lobster! Nova Scotia Lobster has a world-over reputation for being a high-quality, full-meated, excellent tasting product.

Lobster is surprising easy to prepare and there are many different ways to prepare Lobster for an excellent meal. First-Time Lobster chefs should not be intimidated by the idea of cooking and then extracting the meat from a Nova Scotia Lobster. The meat from Nova Scotia Lobster is white, with a pleasant firmness and density and rich savory flavour that is more than worth the effort of preparation.

 
Top Quality: 
 
  • Live lobsters are purchased each day from local independent fishers during the harvesting season.

  • Following purchasing from fishers, lobsters are normally unpacked from crates, inspected, sorted, repacked into crates, then stored in above-ground holding tanks at the facility.

  • Cold seawater is circulated constantly into holding tanks where live Lobsters await shipment to market.

 
Product Consistency: 
 
  • All lobsters are inspected by hand and then sorted using a computerized sorting system unless otherwise specified by the customer.

  • Sorting process ensures consistent sizing of crated lobsters every time.

  • Lobsters are packed in standardized plastic crates
