Fresh, Frozen, Salted and Marinated Herring:

 
 
Harvesting season  for herring is during the Summer and Fall months (Mid April to October). All Herring processed by Sable Fish Packers (1988) Limited is caught in Canadian Waters of the Northwest Atlantic Ocean (NAFO Area 21) by a local Purse Seine Fleet. The Herring are caught normally at night and are held in Refrigerated Sea Water holding tanks aboard the vessels until they reach port. Our Processing Factory is capable of processing over 100 MT of fresh whole Herring per day. Our grading system and production plant are setup in a way that allows very quick sorting, processing and quick-freezing in a series of horizontal plate freezers. After plate freezing, Herring products are stored in our cold storage facility at regular holding temperatures of -30 Celsius.

The Nova Scotia Purse Seine Herring Fishery is currently undergoing assessment for MSC Certification.
